Fennel isn't something that is native to the Caribbean, so it isn't a vegetable that I grew up eating. I was fortunate that I got to travel quite a bit so that I knew what it looked like, and I was fortunate enough to taste it, but it certainly isn't a vegetable that I picked up regularly, until recently.

This recipe is simple to prepare but has tremendous wow appeal. I first made this in class and then re-used the recipe for a dinner party that I had later that week.

It's coming up to that time of year where I'll have lots of tomatoes to harvest. I'd dusted this recipe off now and now I'm enjoying great tomato sauce all winter long.

We love lentils. Living with, and cooking for a vegetarian I look for different ways to make sure that they are getting enough protein. My husband likes soup and he likes lentils so ergo I made him lentil soup.

While we were in Italy we took a half-day cooking class where I learned to make pasta. I mean, how can you go to Italy, take a cooking class and NOT learn to make pasta. The chef made it look sooooo easy and this was one of the dishes that I absolutely loved.

A spicy and sweet jam that goes well with a nice, sharp cheese, and it's really great with grilled cheese. Although the recipe involves hot peppers, the end result is a jam that is actually very flavourful and not that hot. If you want to increase the heat intensity, leave the seeds in when you prepare it.
