Fennel isn't something that is native to the Caribbean, so it isn't a vegetable that I grew up eating. I was fortunate that I got to travel quite a bit so that I knew what it looked like, and I was fortunate enough to taste it, but it certainly isn't a vegetable that I picked up regularly, until recently.
While we were in Italy we took a half-day cooking class where I learned to make pasta. I mean, how can you go to Italy, take a cooking class and NOT learn to make pasta. The chef made it look sooooo easy and this was one of the dishes that I absolutely loved.
A spicy and sweet jam that goes well with a nice, sharp cheese, and it's really great with grilled cheese. Although the recipe involves hot peppers, the end result is a jam that is actually very flavourful and not that hot. If you want to increase the heat intensity, leave the seeds in when you prepare it.
