One Egg Banana Bread Recipe

Last week I bought some organic bananas because he who shall not be named, complained that the last set of bananas were too large and looked like they were grown in a lab. It's true, they did look a little freakishly large, but hey they were on sale.

I was forced to buy these organic bananas which ripened faster than we could eat them so this morning I made banana bread for brunch.

This is a classic recipe that's hard to mess up so enjoy.

Banana ripe and smashed
1⁄3 cup
Melted Butter
3⁄4 cups
1 teaspoon
Vanilla Extract
1 teaspoon
Baking Soda
1⁄4 teaspoon
1 1⁄2 cup
1⁄2 cup
Walnuts (rough chopped)


1. Preheat the oven to 350°F. Butter a loaf pan.

2. Add melted butter to the mashed bananas in a large mixing bowl.

3. Then add in the sugar, egg, and vanilla and stir until combined.

4. Then add the remaining dry ingredients and mix in.

5. Pour mixture into pan, and bake for 50 to 60 mins until done or, until the bread tests done.
