Spring is finally here. The days are getting longer, it's finally getting warmer and the snow is finally melting off of the barbecue. Yay!! I'm finally going to be able to start movie away from making stews and soups and start making salads again. This week I found myself wanting to eat some beets so I pulled together this ah-mazing roasted beet salad. Come on warmer weather.
For today's Sunday bread I made a cross between a cornbread and a sweet raisin bread and whoa, it's packed with flavour. We really enjoyed the taste of cornmeal with the sweet raisins, without the heaviness and density of a regular cornbread. I'd make this again with one slight change, I'd change the type of dish that I'd bake it in, because I ended up with a larger, flatter bread that I'd intended.
I love fried chicken. There's something so satisfying about biting into that crispy, crunchy outer shell and getting to the tender, moist chicken below. I found this alternative "fried chicken recipe" that's oven baked with the same level of crunch. Hmmm excuse me while I take another bite. Crrrrunch!
They're not the most attractive looking buns but they taste sooo with a hot cuppa tea. February was a tough month for me and my family, as my beloved grandma Ruby passed away. It's too fresh for me to write about her as yet so instead I've been cooking and re-connecting with memories from my youth.
Fry bakes? Wha? How can you fry something baked? Don't let the name fool you this is a delicious fried bread that's my personal favourite to eat. When I was growing up this was an occasional weekend treat that we all looked forward to.
