Green Apple and Raisin Salad

In the summer, I like to cook everything on the bbq, if I have to stand over a stove I’ll admit I gotta think about it A LOT. So we eat, I eat lots of salads and grilled meat or fish. Last Sunday, I had an incredibly lazy day and didn’t really want to wander through the supermarket on Sunday night, fighting the crowds to pick over whatever was left in the meat section.  Don’t judge me cause I’ve seen you wandering through the aisles doing the same thing!

Instead I delved into my freezer pulled out some fish steaks and pulled together an epic salad – if I say so myself. The salad was epic because I used one green apple, a handful of raisins, almond slivers and cilantro (which I love), some #Herbamare zesty sea salt seasoning, and made a green apple and raisin salad. I made the marinade for the salad using a lemon juice, olive oil and Whoa – yep you got it, I’m a culinary MacGuyver! I made the salad, left it to marinate in the fridge and stared at the grass growing up through the patio stones in the backyard and pondered the mysteries of life.

The next day I had to took some leftovers to work, added some mango and voila the Green Apple, Mango and Raisin salad.

Green Apple and Raisin Salad

Green Apple (cut into matchstick sized pieces)
Tomatoes, seeded and diced
1⁄2 cup
Lemon Juice
2 1⁄2 cups
2 tablespoons
Cilantro, fine chopped (Alt Parsley)
Mango, julienned (optional)
1⁄2 cup
Olive OIl to taste
Cider Vinegar to taste
Herbamare Zesty to taste (Alt Salt)
Almond Slivers to garnish


1. Put 2 ½ cups of water and half cup of lemon juice in a bowl. Core the apple and cut it in half. Slice each half lengthwise into thin slices. Make stacks of 4-5 apple slices and cut them lengthwise again into thin matchsticks. Soak the apple matchsticks in the prepared lemon water.

2. Slice the shallot thinly lengthwise.

3. In a mixing bowl, toss together the shallot slices, tomatoes, the apple matchsticks, and cilantro.

4. Make marinade by seasoning to taste vinegar, olive oil, and Herbamare sea salt seasoning.

5. Toss salad with marinade and set aside covered for 20 mins before serving.
