Cilantro Scones Recipe

It's finally warming up and in another couple of weeks, it'll be warm enough to start having breakfast outside. Sunday mornings I tend to make big breakfasts and we have a leisurely breakfast that could double as brunch. I've been experimenting with my go-to scones recipe, and found this one that uses both all purpose flour and pastry flour. I tried this and cut them into triangles which I don't normally do and I have to say I really like the look of it.

The scones weren't too dense (which we like) and they could hold all of the delicious things that we had for breakfast. Happy Sunday!

Cilantro Scones Recipe

Ingredients

1 cup
All-purpose flour
1 cup
Pastry Flour
1⁄4 cup
Sugar
1⁄2 teaspoon
Salt
2 tablespoons
Baking Powder
3⁄4 cups
Butter
1 cup
Milk
1 cup
Cilantro, chopped
1  
Egg
1 tablespoon
Water

Instructions

1. Weigh and measure all ingredients accurately

2. Sift all of the dry ingredients together into a mixing bowl

3. Cut the butter into small pieces and rub into the flour until the mixture resembles a coarse cornmeal.

4. Combine the milk, and mix until the ingredients are combined, then add cilantro and knead until a soft dough is formed. Do not overmix

5. Pour the dough out onto a floured bench and knead lightly by pressing it into a circle that is 1/2 inch thick. Cut into 8 wedges. (Note: I cut 4 of my wedges in half again because my niece and nephew were eating with us, so I got 12 scones from this recipe)

6. Place on parchment-lined tray and egg wash (1 egg and 1 tablespoons of water) the tops. Bake in a 400F oven for 15 to 20 minutes or until the scones are golden brown.
