Apple and Raisin Bread Pudding

What do you get when you put cinnamon sugar, 2 almost empty bags of raisins, 1 half-eaten loaf homemade bread, 1 cup of buttermilk , 1 cup of skim milk, 2 bruised apples, and a food blogger who thinks she’s on an episode of Masterchef Canada? You get an Apple and Raisin Bread pudding! Ta-da!

I’m about to out myself publicly for a wee problem I have. I collect food items that I'm 100% positive that I'm gonna need at the time I'm getting it. Ordinarily I wouldn't say this is a problem but I can no longer put anything else into the pantry. The shelves are full to bursting, so  I’ve been challenged to shop my pantry and clear out more than 50% of what's in there before I'm alloed to get anything else. Grrr!

Last year, I won a Redpath gift basket that included all sorts of sweet treats and over time, I’ve either given some away or used them up except for this one bottle of cinnamon sugar. What??? How could that have happened, well it was lurking behind the 3 bottles of cinnamon that I had in there. Be nice, don’t judge!  It's not the prettiest looking dish but it's simple, easy, filling and excellent with 1 or 2 scoops of vanilla ice cream. I can’t wait to see what I find at the back of the cupboard next week.

Apple and Raisin Bread Pudding

6 slices
Bread, thick sliced and cubed
1⁄4 cup
Butter, Melted
3⁄4 cups
Cinnamon sugar
2 cups
1 teaspoon
Vanilla Extract
1⁄2 cup
Apples, cored and cubed


1. Preheat oven to 350F and grease 9 x 13 baking dish.

2. Cube bread and put in a deep bowl. Melt butter and pour over bread and mix until the cubes are coated, then add apples and raisins.

3. In a separate bowl, whisk together eggs, milk, vanilla and cinnamon sugar until the sugar is dissolved.

4. Pour milk mixture over the bread, and push bread down to ensure that the milk mixture is completely absorbed.

5. Put into pre-heated oven and bake for 45 minutes, or until the pudding sounds hollow when tapped.
